M&M cookies
- 2 cups and 2tbsp of all purpose flour
- 1/2 tsp baking soda
- 1 1/2 sticks salted butter, melted
- 1 cup brown sugar
- 1/2 cup white sugar
- 1 large egg + 1 egg yolk
- 2 tsp vanilla extract
- 1 cup mini M&Ms
- Preheat the oven to 180C, line your cookie sheets with parchment paper
- In a medium sized bowl, sift together the flour and baking soda
- In your bigger mixing bowl, beat the butter and sugar at medium speed for about 3-5 minutes
- Add the eggs and vanilla extract to the butter and sugar (LOL I typed bugger first) mix, beat until fluffy
- Add the flour mixture a cup at a time, beat until incorporated
- I didn't do it this time, but in future I might also add 1/2 cup of milk to the batter
- Fold in the M&Ms with a spatula
- Drop teaspoonfulls (for small cookies) or tablespoonfulls (large) of dough, 2 inches apart on the cookie sheet, and bake for 8-10 minutes. OR until the cookies gets slightly golden around the edges, and pops right back up when pressed lightly with a finger in the middle
Without the milk that I usually add in my cookie batter, these turned out a little tough. I like chewy cookies, so in future will definitely include milk and probably increase the dough to M&M ratio.
